Gluten-free Peanut butter drops

glutenfreepeanutbutterdropsTalk about one of the easiest recipes out there… too sweet for me, but Tall Man and The Tryst-meister GOBBLE THESE UP!

{Trystan is my gluten-free and lactose-free munchkin! WOWWIE! Some of the things that I have learned from him!}


  • 1 cup Brown Sugar packed
  • 1 cup Peanut Butter
  • 1 egg, beaten


  1. Preheat oven to 350 degrees
  2. Beat together brown sugar, egg and peanut butter until well blended
  3. Shape dough into 18 round balls (about 1 to 1-1/2 inch round) and place on 2 baking sheets
  4. Flatten dough with fork
  5. bake 10-12 minutes or until set
  6. remove and let cook on wire rack.

Optional: drizzle with melted chocolate 

Getting started with essential oils

I have been getting a TON of people asking about getting started with essential oils. Let me first tell you my stories!


I am feeling GREAT, healing wonderfully and treating my family with some amazing natural products that are from GOD. How could you go wrong with using oils that are coming right from plants? (Want to know what I went through  that really got me thinking about essential oils, click here)

I adopted 2 of my children in May of 2013. Breckin and Trystan were 2 children who were severely abused and neglected. (We are very open and honest about this because they are very open and honest to anyone who talks to them about it). Both Breckin and Trystan have PTSD and have nightmares… or I should say HAD nightmares.

We have started them on Peace and Calming at night to help with sleep and calming down… The very first morning after we used it, Breckin came into my room and said “Mama, I wet my bed last night”. He not only slept without nightmares, but it was the first time in 8 months that he slept soundly! I have since adjusted how much that he is using, but now, he knows that he can ask for some to put behind his ears and on his feet before bed if he has had a troublesome day. And IT WORKS!!!

I am using Frankincense oil for the scar on my neck from my thyroid removal. It is healing rather nicely and I am not so self-conscious about how it looks now because it is healing so well.

I stopped taking pain medication after my surgery, but rather rubbed in my PanAway Cream that I made to reduce pain and swelling.

I have also lost 10 pounds since my surgery and am taking lemon and peppermint oils every morning and every evening in a capsule to help with detoxing. I FEEL AMAZING!

Shelby is using Lavender and Peppermint oils behind her ears and her allergies have gone almost entirely away. She stopped taking her over-the-counter allergy meds!!!

Thieves Oil is helping with some of the other munchkins’ colds and runny noses. We are comverting many of the kiddlings this direction. LOVE THIEVES OILS!

OK, SO now that I have told all of the things that we have been doing, know that we haven’t opened our medicine trunk in several weeks!!!

How to cut an apple!

My sister (and BESTIE) is SO SMART!!!!  I LOVE that she finally put up her website at I know, I know, you are thinking what the heck does that mean? RIGHT?

She and her husband and boys are eating better, living healthier and all processed and chemical FREE!

I was on her blog this morning and saw this video on “Coring an apple!!” Like I said, she is SO SMART! (Because I am one who quarters and then scrapes out the seeds!)

50 pounds of chickpeas? hummus recipes

50 pounds of chickpeas – How long will that last? 

bulkchickpeasThis household LOVES hummus. I can’t keep it stocked and most of the time, when I go to get some out of the fridge, there is one or two teaspoons full left and that is it. GRIFFEN !!! – You know that I am talking about you!

This weekend, I picked up 2-25 pound bags of dried chick peas. Tall Man was kind enough to run and pick up my Bountiful Basket order on Saturday morning for me since I am still a little bit under the weather after my surgery. (day 12 post-op!!) THANK YOU LARRY for running errands on your birthday!

Me, being me, decided that they needed to be put in “our family” serving size bags for better storage… I am only 25 pounds into this bulk journey, and we have 20-3 cup bags and a whole bowl soaking for tomorrow’s hummus.  25 pounds to go!!

Here are a few hummus recipes to keep you going this week!  (serve with pita, chips, carrots and bell peppers, use as a spread on sandwiches)


I always double my recipes and use 3 cups of chickpeas.

Sun Dried Tomato Hummus


  • 1 Can Chickpeas drained and rinsed
  • 2 tbsp Extra Virgin Olive Oil
  • 1 Garlic Cloves
  • 3 tbsp sun dried tomatoes in oil
  • 2 tbsp parsley
  • 2 tbsp of Lemon Juice

Puree all ingredients in a food processor and blend until smooth.


Red Pepper Hummus


  • 1 Can Chickpeas drained and rinsed
  • 1/2 Cup Chickpea Water (from can) or 1/2 cup water
  • 1 tbsp Extra Virgin Olive Oil
  • 3 Garlic Cloves
  • 3 tbsp Tahini
  • Splash of Lemon Juice
  • 1/2 cup roasted red peppers


Creamy Greek Yogurt Hummus

(lower in fat)


  • 1 Can Chickpeas drained and rinsed
  • 1 tbsp Extra Virgin Olive Oil
  • 3 Garlic Cloves
  • 1/2 cup plain yogurt
  • 1 tbsp Tahini
  • Splash of Lemon Juice

Puree all ingredients in a food processor and blend until smooth.


Creamy Greek Yogurt Hummus

(lower in fat)


  • 1 Can Chickpeas drained and rinsed
  • 1 tbsp Extra Virgin Olive Oil
  • 3 Garlic Cloves
  • 1/2 cup plain yogurt
  • 1 tbsp Tahini
  • Splash of Lemon Juice

Puree all ingredients in a food processor and blend until smooth.


Avocado-Hummus Dip


  • 2 medium Hass avocados, peeled and chopped
  • One 15-ounce can chickpeas, drained and rinsed
  • 1/4 cup fresh lemon juice
  • 1 1/2 tablespoons tahini
  • 1/2 cup extra-virgin olive oil, plus more for drizzling
  • Kosher salt
  • Freshly ground pepper

Puree all ingredients in a food processor and blend until smooth.


Green Goddess Fresh Herb Hummus


  • One 15-ounce can chickpeas, drained and rinsed
  • 1 clove garlic, roughly chopped
  • 2 tablespoons tahini
  • the juice of one small lemon
  • extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/2 cup water
  • 1 heaping cup fresh herbs, roughly chopped (Dill, Basil, Tarragon, and Chives, Thyme, Cilantro, Parsley – or any fresh herbs that you like!!)

Puree all ingredients in a food processor and blend until smooth.

Essential Oil Tuesday – Homemade Pain Ointment


I hate taking medicine. I have always HATED popping a pill to feel better. I wanted to find an all natural solution and it looks like I did.

2 weeks ago, I had a removal of a portion of my thyroid along with a “interesting” tumor.  I was given pain meds for the soreness and swelling.  There was a lot of swelling! Instead of taking meds with a ton of side effects,  I opted for essential oils!

This is the EASIEST recipe. and then you just take a little and RUB it on the sore and swelling. I am a believer as I haven’t taken pain meds for my neck! (And Tall Man has given a few massages in the process as well! YEA!)


Homemade Pain Cream



In a 4ounce glass mason jar, heat coconut oil until a liquid. Drop in 10 drops of PanAway Essential Oil. Stir well and a let cool over night. The coconut oil will turn back into a solid state.  Rub on body as needed.

The girls have officially started laying!!! We are getting 18+ eggs a day!  I foresee breakfast for dinner and for lunch and well, for breakfast. …

In our continued journey for better health, minus a thyroid, plus essential oils

I get an annual physical as does Larry and although I am a short-round, I am in GREAT health. I haven’t had a cold in years. This last winter proved me wrong. I got a terrible sinus infection in December 2013 that didn’t seem to ever shake away.

In January of 2014, I took one of the kiddlings into the doctor’s office because they had a terrible cold as well. In the process, the doctor noticed that my neck was swollen and asked if I had any thyroid issues. “Nope,” I replied, “just this nasty sinus infection.”

Little did I know, this was leading to a surgery and removal of a very large tumor in March. … less than 6 weeks from start to finish, I saw a specialist, had blood work, an ultrasound, surgery and now recovery.  It was a whirlwind of events, but as a family, we will survive. I ended up with a 7cm long non-cancerous tumor covering the right lobe of my thyroid.

lookwhatjustgothereDuring all of this time, (and for a long time before this anyhow) my sister and I had both been researching more natural ways to heal and live. Essential Oils were the way to go. 3 Days after my surgery, I signed up for Young Living Essential Oils. I got my first shipment, starter kit and home oil diffuser.

I have been so impressed at the products (and there is even some oils for thyroid health too!!!) We have already placed a second order and have a 3rd ready for April.

I had no idea that there were oils that work as a pain relief or for scars (been putting Frankincense on my neck and am already seeing the difference). There are oils to help with colds and coughs and to bring your attitude up and also to relax your body. Last night, I woke up at 4 am and couldn’t go back to sleep… a little lavender in my  difusser did the trick and Lar’s and my bedroom and bathroom smelled so great when I work up this morning as it still lingered in the air.

The first night, I gave my little boys the Peace and Calm – They both slept through the night with no nightmares for the first time in MONTHS! (actually one of them slept SO sound that he wet his bed!) I am SO excited to get this going and research more and more of this natural way of healing.

Quite contrary, how does your garden grow?

It’s been several weeks since we posted any progress on our garden and I am pleased to announce that we are growing right along.

Of the seeds that we planted directly in the ground, the peas, spinach, lettuce, radishes, and turnips are all doing GREAT. The munchkins can’t wait to eat right from the garden. As a matter of fact, I don’t think that one single pea pod made it into the house last season… GREEN CANDY for the littles.


We also have a whole greenhouse FULL of tomatoes, brussel sprouts, peppers, kale, swiss chard, watermelon, squash and more!

Tip for your growing season: Tomatoes seeds start GREAT in red solo cups!
