2018 Christmas – Advent, Day 3, breakfast egg biscuits

December 3:

Try something new for breakfast. In our home, we like to make a whole breakfast wrapped up into one “sandwich”.  Once made the kids can grab and go. They will also stay good in the fridge and can be reheated in the oven or microwave (We don’t have a microwave, so I don’t know how long to put them in for.)

We start out by adding biscuit dough to the bottom of a muffin pan (I don’t know why my preference is my square brownie pan ( here is the Amazon Link: https://amzn.to/2SrnAp0 ), but you can use any non-stick pan that you have. 

Then we add a single egg. I do crack the yoke, you do not have to. 

Top the eggs with cooked ham, sausage or bacon and sprinkle with cheese. 

Into the oven, it goes for about 25 minutes or until the eggs are cooked.

The biscuit dough can be either store-bought or homemade. Many times we will make a batch of freezer dough to have available for mornings like this.  There are great recipes in the 2 books in the “Don’t Panic Dinner’s in the Freezer” series.  I like this series because each recipe shows the x3, x6 and x9 to make multiples of each recipe for later.  The “More” book has a biscuit recipe in it.

Place biscuit dough in the pan. 

Break one egg on each biscuit

Add Cheese and cooked meat to the top of the egg.

 

Bake for 25 minutes or until eggs are cooked. 🙂

Make a craft today. I love creating things… especially things with my kids.

Here is a 1 page print out of a nativity scene for you. We made this many years ago and still print it out every year for my kiddoes. 

The download is free. Print on cardstock,  cut out the paper dolls and tape them to popsicle sticks.  (This year we are laminating ours too). This is a GREAT way for younger kids to retell the birth of Jesus through the season.  

Christmas Cookies & Desserts – Missouri (No Bake) Cookies

This is my favorite childhood cookie. My grandmother always made these and even would make and bring during visits into my adulthood. This is the recipe that she gave me on my wedding day. 

Ingredients: 

  • 2 Cups Sugar
  • 3T Cocoa Powder
  • 1 Stick of Butter
  • 1t Vanilla
  • 1/2 Cup Milk

Stir together above ingredients in a pot on the stove. Cook on high for exactly 5 minutes. Stir constantly. 

At 5 minutes, remove from heat and stir in the following: 

  • 1/2 Cup peanut butter
  • 3 Cups instant or quick cook Oatmeal

Stir until mixed well. Spoon into “cookie-sized” bites onto wax paper and let cool and set. 

 

 

Elderberry Syrup for those winter colds

My children know that when they are starting to feel yucky, they can just go into the fridge and get out the elderberry syrup. And all they need to do is to take a spoonful. We have been making this for years. 

Ingredients

  • 3/4 cup dried elderberries (There are many places to get these… The best price that I have found and from a company that I trust is Mountain Herbs – https://www.mountainroseherbs.com/products/elder-berries/profile
  • 3 cups water
  • 1 tsp ground ginger
  • 1 cinnamon stick (I keep these around for my chai tea)
  • 4 whole cloves (I keep these around for my chai tea, too)
  • 1 cup honey (I buy local honey from a small store in my area called HoneyMan.)

Instructions

  1. Add the berries, water, cloves, ginger, and cinnamon stick to a large pot and bring to a boil. 
  2. Once boiling, reduce the berry mixture to a simmer. (I actually cooked today’s batch on my wood stove)
  3. Allow ingredients to simmer for 30 minutes.
  4. After 30 minutes, remove from the heat.
  5. Add your honey to your jar.
  6. Strain the berries from the juice, using a cheesecloth and small mesh sieve over your jar. 
  7. Now you have the perfect syrup for fighting off the sniffles this season. Keep your jar in the fridge.
  8. Take 1 tablespoon daily by spoon . When I am in the middle of a cold, I take it 3 times a day.

Colloidal Silver – What is it?

After 2 weeks of coughing and tight lungs, I finally went in to see the doctor. Dr. Chris took one look at me and said Walking Pneumonia…. ewww Every year at the same time, I get severe allergies and then cough an wheeze for months.  Fast forward to 11/7/2018 (now 5-1/2 weeks with a cough and mucus) It is time to hit the books and break down and purchase some colloidal silver. Himalayan Salt Lamp

I have been doing a lot of research on the Himalayan salt lamp and all of the benefits that it has.

(This is psuedo-science and many western medicine doctors don’t believe that they are any more than a pretty light. But many eastern medicine and natural paths believe otherwise. )

However, after looking into more “natural” medicines in my home, I have found that there are possibilities that this lamp can help with negative ions in the air and help pull out allergins.  And I get a pretty light too. 😉

 After my partial thyroidectomy 5 years ago (WOW! It has been that long!!) the doctor took me off of iodized table salt and put me only on blue/grey Celtic salt or pink Himalayan salt at home. So let’s talk more about the lamp! 

Salt is naturally hygroscopic.  Hygroscopy is the ability of a substance to attract and hold water molecules from the surrounding environment. So, the salt lamps can potentially attract water molecules in the air. Since water in the air can also hold allergens, pollutants, and even bacteria, these substances get attracted to the lamp too. The heated salt lamp supposedly dries out the water vapor, leaving the particles attached to the salt. Anything that helps get allergens out of the air of my office is a plus in my eyes since I spend so much time in there on the computer. Many sources recommend wiping down the salt lamp with a cloth at least once a week to clean it off.

The lamp can produce negative ions (not a lot). The negative ions cling to the positive ions that items like electronics produce and help eliminate some of those “disturbances in the force”. (Yes, a Star Wars reference just came out.) So, I opted to put my lamp in my office by my computer for that reason as well. 

There is research done on the colors of the lights that we use… At night, blue lights are bad for the brain and can interrupt sleep cycles… The salt lamp with their pink/orange hues can help with better sleeping even when used as a night light. 

My plan is to pick up one for each of my kid’s rooms to add a beautiful light and to possibly help better their health and the air quality even if it is just slightly. 🙂

 

 

DIY Jellyfish Halloween costume

What you will need:

  • White or clear solid colored umbrella
  • Battery powered tea lights
  • White tulle, streamers, and curling ribbon
  • Clear shipping tape
  • Glowstick
  • XL googly eyes

Start with taping the googly eyes on the umbrella. Then, tape the battery pack to the umbrella and wrap the string of lights around.  Then hang and wrap the ribbons, tulle and streamers to make the tentacles.  This is a fast and inexpensive costume. Many items can be found at the dollar store.

 

 

 

Favorite Circus Cookie Recipe

One of my all-time favorite cookies is the Circus cookies. This is a recipe that we have been using for years. LOVE that the kids can help out (and since the littles are getting older, they can even do this one themselves) and make these as well.

I picked up the mini Noah’s Ark cookie cutter set (Here is the link on Amazon: https://amzn.to/2CHh9cH) that is the perfect size for these little cookies. 

Cookies

  • 2-1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 sticks butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 large egg
  • 2 tsp vanilla extract

Icing

  • 1 1/2 cups powdered sugar
  • 1/4 tsp vanilla extract
  • 4 Tbsp half and half,  or 6 Tbsp heavy cream, or 7 Tbsp of milk plus more as needed

Instructions

For the cookies:

  1. In a mixing bowl mix together flour, baking powder and salt, set aside.
  2. In the bowl of an electric stand mixer cream together butter, granulated sugar and powdered sugar until well combined.
  3. Mix in egg, vanilla extract. With the mixer set on low speed, slowly add in flour mixture and mix until combined. Divide mixture into 2 equal portions.
  4. Wrap with plastic wrap and chill 1 1/2 hours, or until firm. 
  5. Preheat oven to 350. 
  6. Dust a clean work surface with flour then roll out to 1/4-inch thickness. Cut into mini animal shapes, then transfer to a baking sheet lined with parchment paper, leaving about 3/4-inch between cookies. Bake in preheated oven about 7 – 11 minutes until set. Remove from oven and cool several minutes on baking sheet, then transfer to a wire rack and cool completely. Repeat with remaining dough.
  7. For the icing: In a medium mixing bowl whisk together powdered sugar, vanilla and enough half and half or cream to reach a medium consistency (not runny, not thick). Spread over cookies and immediately sprinkle with sprinkles after frosting each one. We dunk cookies into bowl and remove with fork, and let rest on a cookie drying rack until glaze has set.
