Chicken Noodle Soup

I love soups! I have always loved soups. Especially with a larger family… Want to make it bigger for more people, just add a few more things into the pot! We double and even triple this recipe – You will need a HUGE cooking pot to do this with.

We are going to be freeze-drying a batch of this as well to see how it does.

  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 3 medium carrots, sliced
  • 3 celery ribs, sliced
  • 1 Tbsp Italian or Greek seasoning
  • 2 quarts chicken stock/broth
  • 8 ounces dried wide egg noodles
  • 2 cups (or more if you want in really meaty) shredded cooked chicken
  • Kosher salt and freshly ground black pepper
  • Optional: Extra water…. Depending on how much liquid that you want in your soup. I alway add between 4-8 cups extra.

    This recipe is so easy!!! Add everything except the noodles into a pot and bring it to a boil. Once boiling, add egg noodles and simmer for 10 minutes to cook the noodles. Serve immediately.
