Peanut Butter Oatmeal Bars

  • 1/2 c. shortening
  • 1/2 c. granulated sugar
  • 1/2 c. brown sugar
  • 1/3 c. peanut butter
  • 1/2 tsp. vanilla
  • 1 egg
  • 1/4 c. milk
  • 1 c. sifted flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. quick-cooking oatmeal


  • 2 c. sifted confectioners’ sugar
  • 1/4 c. cocoa powder
  • 3 tbsp. butter melted
  • 2-3 tsp. boiling water
  • 1/2 tsp. vanilla


  • 2 tbsp. butter
  • 1 c. confectioners’ sugar
  • 3-4 tsp. milk


For the Cookie Dough

  •  Cream together the first 5 ingredients until fluffy. Add egg and 1/4 cup of milk; beat well. Add next 3 ingredients sifted. Beat until well combined. Stir in oatmeal. Spread evenly in a greased 9×13 inch pan. Bake at 350 degrees for 20 minutes. Cool thoroughly.

For the Frosting

  • Sift the confectioners' sugar with the cocoa powder. Quickly stir in the melted butter, boiling water, and vanilla; beat until smooth. Spread quickly and evenly over cooled cookies in pan.

For the Glaze

  • Heat and stir 2 tablespoons of butter in a small saucepan until golden brown. Remove from heat. Stir in the 1 cup confectioners' sugar and the 3-4 teaspoons milk. Drizzle over chocolate frosting. Cut into bars.
