Ingredients:
2 zucchini, sliced
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 red onion, chopped
1 cup cherry tomatoes
1/4 cup olive oil
2 tablespoons balsamic vinegar
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
Instructions:
In a large bowl, mix olive oil, balsamic vinegar, garlic, oregano, basil, salt, and pepper.
Add vegetables to the bowl and toss to coat.
Thread vegetables onto skewers.
Preheat grill to medium-high heat.
Grill skewers for 10-15 minutes, turning occasionally, until vegetables are tender and slightly charred.
Serve immediately as a side dish or a main course.
