Grilled Vegetable Skewers with Herb Marinade

1. Grilled Vegetable Skewers with Herb Marinade

Ingredients:

  • 2 zucchini, sliced

  • 1 red bell pepper, chopped

  • 1 yellow bell pepper, chopped

  • 1 red onion, chopped

  • 1 cup cherry tomatoes

  • 1/4 cup olive oil

  • 2 tablespoons balsamic vinegar

  • 2 cloves garlic, minced

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • Salt and pepper to taste

Instructions:

  1. In a large bowl, mix olive oil, balsamic vinegar, garlic, oregano, basil, salt, and pepper.

  2. Add vegetables to the bowl and toss to coat.

  3. Thread vegetables onto skewers.

  4. Preheat grill to medium-high heat.

  5. Grill skewers for 10-15 minutes, turning occasionally, until vegetables are tender and slightly charred.

  6. Serve immediately as a side dish or a main course.
